About a month ago I moved into a new house. My roommates and I still had a few days before the gas was to been turned on, it was late, we had been drinking some beer and we were hungry. While looking through our very short selection of food I realized that I would have to come up with a nice meal to christen our new home. After all I didn't want ramen noodles to be the first thing we ate.
As I looked through the fridge and pantry my mind went to work. One pound of ground beef, pepper jack cheese, lettuce, tomatoes, and some bread. Instantly I thought burgers, but how was I to season this meal to make it taste like more than the norm. As I continued searching the fridge I found some green bell peppers, which, incidentally, reminded me of some fresh herbs that we had received as a house warming gift. I went and looked through the herbs; rosemary, parsley, and cilantro.... Hrmmm... pepper jack cheese, cilantro, green peppers... kinda had a Spanish flavor working in my mind... so I went back in and started to finely chop some cilantro and bell peppers. It still felt like it was missing something, I started to take a drink of my beer and then it hit me. I had been drinking the answer this entire time. I shouted "SaaNap!" everyone turned to me and I shouted in an epic manner...
"We have one pound of ground beef
one bell pepper, thinly chopped
about a cup of cilantro, chopped
one egg, beatin... because It talked back... (I don't care if people say binders don't make burgers)
quarter cup of mayonnaise, cause white folks love mayo
salt and pepper, to taste, and last but not least
6 oz of dos equis amber..."
After I mixed all the ingredients together, I formed them into four patties and cooked them on the Foreman, aka "The Muscle" for those of you who don't know, for about six minutes or until they were cooked to medium. Now I know that this already sounds great but once topped with pepper jack cheese, lettuce, tomato, and some leftover guacamole, (<<<) last minute find = yummy, this burger began its transformation into something amazing... which I have aptly named "El Borracho!!"
(A couple of side notes... I would have liked to put some jalapeños and maybe some onions in it... also the name "El Borracho!!" is meant to be shouted.... so if your ever telling someone about this make sure you put some extra Umpff in it.)
